Zucchini Mini-Muffins

3 eggs
1 c. vegetable oil
1 1/2 c. packed brown sugar
2 c. grated zucchini
2 t. vanilla extract
1 c. all-purpose flour
1 c. whole wheat flour
1/4 c. flax seed meal
1/4 t. baking powder
2 t. baking soda
1 t. salt
3 t. ground cinnamon
1 c. chopped walnuts (opt)
1/2 c. chocolate chips (opt)
Combine eggs, oil, sugar, zucchini and vanilla in large bowl. Mix well.
Combine flours, baking soda, baking powder, salt, flax meal and cinnamon.
Combine with wet mixture.
Stir in nuts and chocolate.
Bake at 350 degrees for 13 minutes (mini muffins) or 18 minutes (regular muffins).
Bake for 1 hour if you're making a loaf of bread.
