Morning Glory Muffins

Morning Glory Muffins:
2 c. flour
1 1/4 c. sugar
2 t. baking soda
2 t. cinnamon
1/4 t. salt
2 c. shredded carrots
1/2 c. craisins
1/2 c. chopped walnuts
1/2 c. flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 c. vegetable oil
2 t. vanilla
1 T. flaxseed meal

Grease or line muffin cups and preheat oven to 350 degrees.

Mix flour, sugar, baking soda, flax meal, cinnamon and salt in a bowl.

Stir in carrots, craisins, nuts, coconut and apple.

Looks yummy already, right?

In separate bowl beat eggs, oil and vanilla. Stir egg mix into flour mix until just moistened. Scoop into muffin tin.

Bake at 350 for 15 minutes.

Makes 12 (maybe more) muffins.

Just at the regular grocery store in the baking/health food section. By the Splenda sweetener...
