Before I even start, I have to apologize for not giving you this a-maz-ing recipe before now. Wow! How terribly unthoughtful of me. I mean really, its just about the best thing you can put in your mouth!

Okay, so without further ado, here it is!

Mexican Casserole

Tortilla Chips
4 oz. can of green chilies
1 pint sour cream (16 oz)
1 cup evaporated milk
1 teasp. oregano
1 teasp. cumin or chili powder
1 lb ground beef
1 cup onion, chopped
1/2 lb shredded cheddar or Mexican cheese blend

Brown meat and onion with some salt & pepper.
Mix sour cream, evap. milk, chilies and spices in large bowl.
Drain meat of fat and add to sour cream mixture.

Layer just enough chips in a 13 x 9 casserole to cover bottom and sides.
Add meat/sour cream mixture over chips.
Sprinkle cheese on top.

Bake at 350 for 30 minutes or until cheese is melted and bubbly.

Serve with shredded lettuce, salsa and remaining chips.

Oh, lawzy mercy, is this a good recipe! Mom has been making it for yeeears and its one of my comfort foods. (This, and cream of wheat loaded with sugar and butter, don't ask...)

I made this last night for dinner and the kids loved it to pieces (literally, like, pieces all over the floor). I served it with brown rice and black beans and all that type of yummy stuff. I substituted ground turkey for the ground beef to cut back on the fat a little bit. It wasn't terrible, but I like it with beef better. Of course.

Oh and the leftovers...the leftovers are a vision! Really they are delicious. Just as good as the first time around. ;)

Frivolous Friday

In light of my recent discovery of "The Austen Within" I couldn't resist picking up this DVD at the best store ever. It was only $5...unbelievable.

Maybe it should be included in my Mom's Night Out tonight. Of course, that would mean that a portion of the evening would technically be "Mom's Night In." But I'm ok with that.

Mom's Big Night Out

I am in dire need of a night out. By. My. Self.
As a mom, sometimes I feel like all I do is nurture, nurture, nurture. The problem is, living with two toddlers, a relational husband and two dogs the nurturing always seems to be aimed in a direction other than my own.

Sometimes you just feel...done.
I don't think my raging Spring fever is helping anything either.

So, I'm taking a night on the town. It's gonna be a big one with an exciting, organic-filled stop at .
And then on to to pick up a copy of and drink a little tea and putz to my heart's content.

Spring Salad

This is one of those essential warm weather recipes that I love to make on and off all Spring & Summer. Every other week you can find a huge bowl of this salad in my fridge. I'm the only one who likes it here - Mr. B. is sort of afraid of it - so I get the decadent honor of dipping my fork in the serving bowl and eating straight from it. Divine!

Oriental Salad
1/4 c. olive oil
2 T. sugar
1-2 T. vinegar
2 t. soy sauce
1 flavor packet in chicken Ramen noodles
Mix it all up until Ramen flavoring is dissolved.
1/2 c. slivered almonds
3 c. packaged coleslaw cabbage
3 c. packaged shredded broccoli & carrot mixture (found next to coleslaw in produce section)
1 package of Ramen noddles - uncooked
Toss ingredients together. Crumble Ramen noodles on top.
Add dressing and toss.
Devour in a very unladylike fashion.
These measurements are approximate. Some people like more dry or wet salad so tailor it to your taste.

Frivolous Friday

So, frivolous Friday has become all about celebs for me. And that's ok...because it's frivolous!

Anyway, I was just thinkin' about some of my favorite Hollywood leading ladies and thought I'd compile a short list. Here goes:

She's adorable. She's a mommy. She's a fun little thing to watch on the big screen. She's southern. And she's blond.

She has this classic beauty. Looks great in red lipstick. She's funny. She dated Ryan Gosling - which is really delightful! She worked at McDonalds when she was young...something I may or may not have been forced to do by my cruel, demanding, unsympathetic mother...

Ellen Burstyn.She is lovely. She reminds me a bit of my mother-in-law (it's a good thing!). She has this great color of grey/blond hair that I'd like to have someday.
Loved her in: The Divine Secrets of the Ya-Ya Sisterhood

And, of course...


Who doesn't love this girl? She's America's Sweetheart. She looks delicious even after bearing twins. She has the best smile.
Loved her in: Pretty Woman, Steel Magnolias and Notting Hill. Oh! and My Best Friend's Wedding

For the Birds

Potty training, that is.

I must be really bad at this mommy thing because Beck is just not getting the hang of this. We've tried bribing, shaming, celebrating, running around with nothing on the bottom (not me, him), asking "need to go potty?" 5,000 times an hour, and reading books like Everybody Poops and It's Potty Time!

So why isn't it working? Any advice from the mama's out there? I'd love a little help...

P.S. I can't potty train my puppy either, so maybe it's just me.

I had the privilege of singing and playing for my MOPS group this morning. It's been awhile since I've been able to consistently minister with music and it was nerve-wracking but fun!

I think I've talked about the music of Sara Groves before. She is an exceptional song-writer. Her music is so real and fluid at the same time. Love her.

These are the lyrics to the song I sang for the group of mothers. It talks about the love a mother has for her child...and the love God has for his children. Us!

...Jason Castro...

I may want to put David Archuletta in my pocket but Jason Castro is slowly winning over my ears (and maybe my heart).

His mello persona, scruffy dreds, raspy, sensitive voice and [uncannily] pretty features never cease to delight me when he steps onto the Idol stage.

I'm tellin' ya, if this guy had an album out I'd run (not walk) and buy it.

P.S. I could never really fall in love with him though. I've made a vow to myself never to date a guy more pretty than myself. ;)

Too Much HGTV

We've been sorta glued to HGTV at our house in the last few weeks. Maybe it's Spring Fever making us itch to do something new. So...we have plans. Lots of plans. Hopefully you'll be seeing many "before and after" photos here in the coming months.

Living room before:

Disregard the's our house after Christmas morning. But notice the stark walls. Now, I'm a white decor type of girl, but this white is more due to busyness (or laziness) than a design choice.


I picked this brown using this waaaay fun little tool on the Behr Paint website.

The accent wall after:
Love this color! There was a point last night when Mr. B. and I looked horrified at each other thinking it looked like Army Green instead of Delightful Brown. But now, in the morning light and dry, it's perfect. Phew!

We're going to add a little crown molding to the top and paint the other walls a complimenting lighter color. To Be Continued...

The deck is abandoned for a late winter storm and we are glad that the saying, "In like a lion, out like a lamb" is true of March.

Hibernation, bear style, sounds like a very good idea.
